Coconut Milk Pancakes
Material:
- 1 cup self-raising flour
- ⅓ cup caster sugar
- ¼ cup water
- 1 eggs
- 1 tbsp dry coconut
- Little cooking oil
- Ayam Brand™ Coconut Milk 140ml
How to make:
mixing:
- Mix flour, sugar, coconut milk, water and eggs together.
- Blend for a few seconds until smooth. Pour the mixture into a pitcher and then just stir in the desiccated coconut.
cooking:
- To prepare pancakes, heat a non-stick skillet over medium-low heat, and lightly grease the pan with oil.
- Once the skillet is hot, pour 2 tablespoons of the mixture into the pan and shake briefly so that the mixture is evenly mixed.
- Let cook for about 1 to 2 minutes on each side or until the pancakes turn golden brown.
- Repeat these steps until the dough runs out.
Presentation:
- Serve with honey for breakfast or with magga sorbet for dessert.
- Kids love to take it to school for snacks.
